Ginger Molasses Cookie's

1/4 cup softened butter
1 cup brown sugar
1 egg
3/4 cup molasses
2 1/2 teaspoons ginger
1 teaspoon cinnamon
3/4 teaspoon salt
2 teaspoons baking soda
2 cups flour
1/2 cup chopped candied ginger (optional)
Cinnamon and Sugar Mixture:
1 cup sugar
2 tablespoons cinnamon
Directions
- In a large stand mixer, cream together the softened butter and brown sugar until well mixed. The cookies are extra chewy due to the lower butter content. Scrape down the sides and continue mixing until fully incorporated.
- Add the egg and molasses. Mix thoroughly, ensuring the butter at the bottom is well combined.
- Incorporate ginger, cinnamon, salt, and baking soda into the mixture.
- Finally, add the flour and chopped ginger (if using). Mix until just combined, avoiding overmixing.
- Cover the dough with plastic wrap and refrigerate for 30 minutes.
- Prepare the cinnamon and sugar mixture and set it aside.
- Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
- Scoop out dough into 1 ½ inch balls, rolling them between your palms for uniformity.
- Roll each ball in the cinnamon and sugar mixture.
